Danish summer favourites 2: elderflower lemonade / Danske sommer favoritter: hyldeblomstsaft

Dansk version sidst I posten 🙂

I just LOVE elderflower lemonade! We use it for drinks, sorbet, cooking and of cause traditional lemonade. Every year I make about 25 liters – and we freeze some for the wintertime J

 You will need:
40-50 elderflower screens
5 organic lemons
2 tbsp. citric acid
750 g organic cane sugar
3 L of water

How to do:

  1.  Shake the Elder blossoms screens free of insects and put them in a large bowl
  2. Wash the lemons and cut them into slices
  3. Add the lemon on top Elder blossoms
  4. Mix together the citric acid with the sugar and dissolve the mixture in boiling water
  5. Pour the syrup over the screens and cover it all
  6. Allow the juice to pull a cold place for 4 days – stir once a day
  7. Si liquid and pour it on the cleaned bottles.

hyldeblomst

Du skal bruge:
40-50 hyldeblomstskærme
5 økologiske citroner
2 spsk. citronsyre
750 g. økologisk rørsukker
3 l vand

Sådan gør du:

  1. Ryst skærmene fri for insekter, og put dem i en stor skål
  2. Skyl citronerne, og skær dem i skiver
  3. Læg citronerne ovenpå hyldeblomsterne
  4. Bland citronsyren med sukkeret, og opløs blandingen i kogende vand
  5. Hæld sukkerlagen over skærmene og dæk det hele til
  6. Lad saften trække et koldt sted i 4 dage – rør rundt en gang om dagen
  7. Si saften, og hæld den på rengjorte flasker.

  1. I love elderflower lemonade too …. my grandma always use to do it … to a very similar recipe to yours … never done it myself … but I buy a cordial. How long can I keep this lemonade ???… only me drinking.

    • You can keep it in the refrigerator for a couple of month – if it stands outside you should add atamon – or any other liquid that makes it last longer – i’m not sure what the english word is… I put atamon in the ones I safe for wintertime 🙂 I look forward to hear about your production!!! happy Sunday xox Camilla
